Marc Declerck is one of a kind. Civil engineer, private banker, entrepreneur, art lover and a huge fan of classical music and opera. His wine and music collection are two of his favorite assets. His contemporary art collection reveals a sharp and open-minded eye.

Today we meet Marc Declerck in his entrepreneurial role as the Managing Director of Gault&Millau, the gastronomic publishing brand he successful runs with his business partner Justin Onclin and a passionate team.

Who better to start our “fine food fanatics” series with then with the “super inspector” himself.

When did you realise fine food was the most important thing in your life?

The most important thing may be somewhat overstated, but when I was 12 I was already keen to visit top restaurants… but I had to wait over 10 more years to fulfill this wish. That waiting time only increased my motivation and I have to admit I managed to make up for the lost time…

Best Belgian gastronomic experience ever?

Best ever is hard to say, I don’t think it exists. The first time in Pierre Wynants’ Comme Chez Soi 35 years ago was a landmark though. Unique cuisine, purity, and as close to perfection as you can get. Many great experiences followed: Scholteshof, Hof Van Cleve, Bon Bon to name just a few.

Worst food experience ever?

Chefs that are trying to do things they do not master in at any level, while using mediocre products and serving bad or boring wines.

Favourite food shopping place?

Rob in Woluwe. Not modestly priced but their quality and diversity are very good.

What magazine / book / website makes your mouth water?

Definitely our Gault&Millau ones.

Which Belgian food artisan merits a statue?

Peter Goossens. He combines great skills with the ability of reinventing himself and overcoming problems, and that’s what life is about.

What makes the perfect food pairing?

Experience in combining foods is a work of a lifetime.

What would your last meal be?

Honestly, I’m mainly interested in my next meal. But if you have to know, I’d prefer my last meal to be on my 100th birthday, in good health, surrounded with great wines and friends. All in that order.

Which Belgian talent should we feature on Belgian Boutique next? Why?

I have a great respect for Stefan Hertmans. I never met him personally but he’s one of our best writers. Good books and guides are the cheapest luxury product you can imagine.
